175g chocolate 75g coconut oil 1 banana 100g sugar 2 tablespoon cacao 100g corn flour 110g flour (I use buckwheat) 1/2 teaspoon baking powder salt 4 drops almond extract
HOW TO DO: I) Mix all dry ingredients. II) Melt Chocolate, oil & sugar together. Add the smashed banana. Put the dry ingredients into this mix and stir well. III) Roll small balls (40g) out of it, put them into the fridge for 30 minutes, cover the balls afterwards with sugar powder by rolling them in a sugared bowl and place it onto a tray.
IV) Take a cup to flatten the balls down (not to much) to cookies.
baking time: 12 minutes heating: 180 degrees
Irina told me, that she produced her cookies before for several cafés im Moscow. Poeople loved them so much that they were waiting for it and, if they were availalbe, could not resist to buy. They are amazing! When I baked them the first time for the canteen at Jivamukti Berlin, everyone was sitting in front of the jar - the cookies are kept in a big jar - and wanted more :)
